Healthy Hummus

Prep Time: 5 minutes
Processing Time: 5 minutes
Quantity: 2 cups
1 (15-ounce) can organic chickpeas/garbanzo beans* (drained, keep a little of the liquid)
Juice from 1 large organic lemon, or 1/4 cup organic lemon juice
1/4 cup well-stirred organic tahini
2 small garlic clove or 1 large elephant garlic clove minced
2 tablespoons organic avocado oil or organic olive oil
1 teaspoon ground organic cumin
Salt to taste (I use himalayan, celtic, or real salt)
2 to 3 tablespoons cold water or the reserve liquid from the chickpeas
Dash ground organic paprika for serving
Directions
Add all ingredients to food processor and blend.
Pulsing at first then allow food processor to blend.
Stopping to scrape the sides as needed.
Add water as needed or you can use the liquid you saved from the canned chickpeas.
I have tried this in a blender, but find the food processor to be the easiest.
I like to serve with a plate of veggie slices to dip or with flax crackers.
You can add any additional spices or herbs you like. Get creative and have fun with it to make Healthy Hummus a way you and your family will enjoy!
*I always wondered if chickpeas and garbanzo beans are the same and joyfully I can say they are! Garbanzo is the Spanish word for chickpea. So feel free to use either to make your tasty hummus!
